Banana Bread with Crumble Recipe
Last week, my mom bought tons of bananas so we had an unusual surplus of bananas which I used to make this banana bread. I can't believe I've never baked a banana bread before this, when it's so fuss-free and yummy.
I also scattered a cinnamon crumble on top of the banana bread batter for some extra flavour. I love the moist and fluffy texture of this recipe, and the bits of soft gooey banana in the bread.
I got my recipe off Foodnetwork.com :
Ingredients:
Banana Bread
113g butter
1/2 cup sugar
100g eggs
3 bananas, mashed coarsely
1 tbsp milk
1 tsp cinnamon
1 tsp salt
1 tsp baking powder
1 tsp baking soda
2 cups plain flour
Crumble
3 tbsp plain flour
25g butter
1 tbsp brown sugar
2 tbsp sugar
1/2 tsp cinnamon
Method:
1. Cream butter and sugar
2. Add eggs and mix well
3. Combine dry ingredients
4. Add bananas and milk to butter & egg mixture
5. Fold in dry ingredients
6. Scatter crumble over batter
7. Bake at 170˚c for 1 hour
This banana bread is even more satisfying when you toast it and have it with a spoonful of crunchy speculoos spread ;)
